In our house, pancakes have become almost a staple. My kids request them more often than any other meal and they have become our weekend go to. There is nothing I love more than making a big breakfast on the weekends so we can regroup and recharge as a family. Since Brandon doesn’t work a typical 9-5 job, these weekend breakfasts have become time that I treasure. During his busy seasons, he isn’t usually around on weekends, so when he is, I try to make breakfast for all of us to enjoy. As a treat for myself, I made these Chocolate Coconut Almond Pancakes, and boy, are they delicious!
