Every year, my mom, sister, and I set aside a day to make Christmas candy and cookies. It’s been our tradition since I can remember, and when my grandparents moved to Illinois, they became part of that, too. My grandma taught me how to make her famous homemade toffee, and this is the first year that she isn’t going to be around to taste the final product. I am so thankful for those memories that I have of her helping me in my mom’s kitchen.
In addition to that tradition, I wanted to start another one with the kids– making some fun, easy goodies to give to others! One of my favorite things to make is Caramel Chex Mix. It’s easy, portable, and kind of addicting once you start eating it! It’s the perfect treat to share this holiday season.
What you will need: Chex cereal, caramel bits or wrapped caramels, butter, and milk.
Measure out 6 cups of Chex cereal into a microwave safe bowl.
In a glass measuring cup, put in half of the bag of caramel bits (or half of the caramels, unwrapped) with 2 tbsp of butter and 2 tbsp of milk. Microwave in 45 second increments, stirring in between each one, until the caramel is completely melted.
When the caramel is melted, pour it over the Chex cereal, stirring to make sure the cereal is evenly coated.
After the caramel is evenly stirred in, put the cereal in the microwave in 45 second increments for 3 times- stirring in between each one to be sure the caramel doesn’t burn. After the third time, lay out on waxed paper to set.
